dont let your leftovers kill you

DONT LET YOUR LEFTOVERS KILL YOU

this is leftovers from our sunday night meal that we in the south call supper

its swiss chard from my garden harvested fresh just a few hours before its cooked
it also has eggplant and mozzarella cheese and tomatoes and bread crumbs and seasonings
its one of my favorite dishes that we make out of our garden 
the different veggies when blended together produces the best flavored tasting meal

later in the year when we have tomatoes and eggplant fresh from the garden we will make the dish with all the major ingredients fresh from the garden including the herbs

in one week if there is any leftovers
its gone
unless its frozen and placed in the freezer
if it is put in the freezer its dated
if its not used by 6 months its sent to the compost pile
no exception

now
my wife she is a collector of leftovers
if it wasnt for me monitoring our fridge i would have been dead from food poisoning by now

its not unusual for me to find some black unrecognizable food in a dish that has almost been fully composted 
if im lucky

this morning i read an article about a college student who got food poisoning from eating his roommates leftovers
at the end of his long hospitalization he survived but lost both legs and multiple fingers

this story confirms why i dont eat leftovers after 7 days

ok im also extra careful about canning stuff
if you dont do it right you can get botulism and die from it
so
i dont can anything

i freeze it
put an expiration date on it 6 months later
if its expired
i compost it

sorry 
i dont want to end up like that college student did

so
if you come over to our house and are looking for leftovers
you are likely to not ever find any 

i do worry when im gone from this earth
i do worry about my wife she eating her leftovers
